Why Instant Coffee Is Bad:
There are many reasons why instant coffee doesn’t live up to its freshly brewed counterpart.
Just take one sip of instant coffee and you’ll see why…
Dehydrated Coffee Beans. Ugh.
Instant coffee is produced by dehydrating coffee made from freshly ground beans. This means the coffee is essentially processed twice.
Dehydration does help preserve the coffee and also makes it much easier to transport (yeah that’s right – easier to transport, which is what we all think about when we’re buying coffee).
The flavour of the original brewed coffee is greatly reduced, and some caffeine and aroma molecules are lost during the process. Which is obviously why you feel like this when consuming it:

Quite often lower quality coffee beans will be mixed with high quality arabica beans, this will obviously diminish the flavour, and diminish the original smooth and bold qualities of arabica beans.
If you have something good and then mix in something not as good, you might expect these results:

Coffee has been noted as containing antioxidants which may help maintain the health of some bodily cells.
As instant coffee is processed for longer and at higher temperatures it may lose many of these antioxidants during production. Healthy people are happy aren’t they? Un-healthy people are:
The dehydration process requires a large amount of high temperature heating, during this heating carcinogens can be formed in certain foods (coffee being one). Acrylamide is one of the compounds that can be produced, this is believed to have many adverse effects to the body, and many more which are not yet known.
Loss of Flavour. No. Kidding.
Due to the longer processing time and longer shelf life instant coffee fails to retain all of the bold flavour of freshly ground coffee beans.
This means instant coffee is much weaker than normal coffee and also has a lower caffeine content than its counterpart.
